I just installed activity watch on my mac. Unfortunatly the browserwindow just show me grey unknown or uncategorized charts. What I have to do, that AW shows me, what I really did?

If you want to add colors by category, go to the settings.
Under the “Categorization” heading, choose a category to edit and press the edit button towards the right.
Under the “Color” heading, turn off “Inherit parent color” and choose your color
Also maybe all your activity is uncategorized which will result in gray, so you need to categorize your activity.
