But if I click on Category Builder, I see Unable to find bucket matching ‘aw-watcher-window_unknown’ (hostname filter set to ‘None’)

and down below
Common words in “Uncategorized” events
No words with significant duration. You’re good to go!

I encountered the same issue.
However, there is a workaround: go to the settings tab and under the “Categorization” chapter you’ll find a working link to the Category Builder.

My Category Building just hangs on “Loading” and error “Unable to find bucket matching ‘aw-watcher-window_unknown’ (hostname filter set to ‘None’)”

Any clues how to fix?

Workaround: In the category builder, click “show options” and change the hostname.

Same problem here. This solved it for me.
